Slow Cooker Minestrone Soup

Minestrone soup is a healthy and hearty vegetarian dish.  The beauty of minestrone soup is that you can add any vegetable and it will still taste good.  The same goes for the beans, while the recipe suggests garbanzo beans and chickpeas, kidney beans or cannelini beans would also be delicious.  Slow cooker minestrone soup is guaranteed to be a tasty meal to cozy up to this winter.

Minestrone Soup

Recipe from Mommie Cooks

3 Carrots, Diced
2 Zucchini, Diced
1 Onion, Diced
3 Celery, Chopped
1 handful of Green Beans
3 cloves of Garlic, Minced
10 Oz. Can of Garbanzo Beans
1 pd of Cooked Lentils
28 Oz. Can of Tomatoes
4 cups of Veggie Broth
1 teaspoon of Curry
1/2 teaspoon of Cumin
1/2 teaspoon of Garam Masala
1/2 teaspoon of Salt
1/4 teaspoon of Pepper
6 ounces of Cooked Noodles
