Paleo Jambalaya

While some of us might take Fat Tuesday literally, others will indulge in moderation.  This Paleo jambalaya from PaleOMG is a perfect example of a recipe that's delicious and festive but still healthy.  This recipe remains true to classic jambalaya flavors but with a few substitutions.  Instead of rice, a head of cauliflower is shredded in a food processor to resemble the grain.  It is cooked with Andouille sausage, chicken and the holy trinity.  To make this Paleo jambalaya yourself, click here.
