Gluten-Free Asparagus and Corn Cakes

Gluten-free asparagus and corn cakes from A House in the Hills is a delicious seasonal dish.  Thrown together without the use of any animal products, these vegan patties work both as an appetizer or a main dish.  The trick is using a flax egg, a combination of ground flax seeds and water, as the "glue" to help all the ingredients to stick together.  Serve these vegetable cakes with a vegan dill cream.  For recipe instructions, click here.
