Easy Low-Fat Vegetarian Chili Bowl with Spinach and Onions

This healthy and easy chili recipe is perfect for lunch, especially for those of us who want something quick but not loaded with fat and calories. I doctor up canned vegetarian chili with diced onions and fresh baby spinach and give it all a healthy squirt of lime juice to brighten up the flavor. It’s a fabulous meal that fuels your body in a guilt-free way. I love using Nalley’s Original Vegetarian Chili with Beans, out of all the vegetarian chilies this one is the lowest in fat that I've found.  A one-cup serving has only 1.5 grams of fat (zero saturated or trans fats!), compared to 9 grams that many other brands have, and is loaded with protein (15 grams).

Easy Vegetarian Chili with Spinach and Onions
Makes 1 serving

1/2 can (1 cup) Nalley’s Original Vegetarian Chili
1 packed cup or 1 large handful of baby spinach, chopped
Diced red onion, amount to taste
Fresh lime juice

Heat chili, covered, in the microwave for 45 seconds. Top with spinach, onions and lime juice then stir to combine. Enjoy!
