Spinach chilaquiles from Veggie Chica is a vegetarian Mexican breakfast. Tortilla strips of tortillas chips are combined with green salsa and cooked with spinach and eggs. This meal comes to together in just a couple of minutes. To boost the protein in the dish, feel free to add tofu crumbles.

1/2 onion, chopped
2 cloves of garlic, chopped
1 12 oz. container of spinach (about 4 cups)
1 red bell pepper, roasted and chopped
1-2 tablespoons of oil
1/2 cup of Oaxaca cheese, shredded
16 oz. jar of tomatillo salsa
10 egg whites
2 cups of crushed tortilla chips or 1 dozen corn tortillas cut into eighths
salt and pepper
dash of cumin
dash of paprika
