Quick and Easy Baked Salmon with Pineapple Salsa

Baked salmon with mandarin orange and pineapple salsa from Mother Rimmy's Cooking Light Done Right is a simple and healthy meal that's ready in under 30 minutes.  Fish is my go to for quick and easy cooking.  Whether fish is baked, fried, or grilled, it only takes a couple of minutes to cook.  Salmon filets are seasoned with lemon pepper and baked in the oven.  It's served with a homemade fruity salsa.  Enjoy this meal on a cool summer evening with a glass of wine.

Baked Salmon with Citrus and Pineapple Salsa

16 ounces wild Alaskan Salmon filets
4 teaspoons lemon pepper seasoning
1 cup red onion, chopped
2 cups mandarin oranges
2 cups pineapple bits and pieces
2 tablespoons honey
1/4 cup pineapple juice
1/4 cup cilantro
1 pinch red pepper
