Kale and sweet potatoes are a natural pairing and work especially well in this winter salad.  Roasted sweet potato slices are served alongside kale leaves that have been massaged with lemon juice and olive oil.  This helps eliminate bitterness while also tenderizing the kale.  The goat cheese and pomegranate seeds add acidity and a pop of color.
