Quick and Easy Dinner: Smoky Chicken Sausage Soup with Kale and White Beans

Four ingredients and about 8 minutes are all you need to make this easy chicken soup: chicken broth, kale, chicken sausage, white beans. For the best flavor, start with a good chicken broth (we like Aneto's all-natural chicken and vegetable broth). The better the broth, the less additional seasoning you'll need to add to your soup. Any flavor of chicken sausage is great in this soup, but the smoky variety adds a nice depth of flavor. This soup is so easy to make and is great on a cold night or when you're feeling a bit under the weather. It's healthy, low-fat and low-cal!

Smoky Chicken Sausage Soup with Kale and White Beans
Makes 2-4 servings

1 box chicken broth (about 1000 ml or 34 ounces)
2 large handfuls of kale
3 smoky chicken sausages, sliced
1 can white beans, drained but not rinsed

Pour chicken broth into a medium saucepan and bring to a boil. Add the kale, cover pot with a lid, and reduce to a simmer. Let kale cook for about 5 minutes then add the sliced chicken sausage and white beans. Cook for 2 more minutes then serve.
