If you are looking for a last minute appetizer, this quick and easy Mexican corn dip is tasty way to go. Canned corn is combined with mayonnaise, Mexican crema (found in the Latin American aisle at the market) and parmesan cheese. Green chiles add a spicy kick. If you are a heat seeker, feel free to add more spice. Serve this dip with tortilla chips and garnish with cilantro.
Mexican Corn Dip
2 (15 oz) cans no salt added yellow corn, drained
1/2 cup mayonnaise
1/4 Mexican crema
1 (4.5 oz) can chopped green chiles, drained
1 tablespoon taco seasoning
1/4 cup grated parmesan cheese
1 tablespoon lime juice
kosher salt and pepper to taste
Step 1: In a large bowl, combine the corn, mayonnaise, crema, and green chiles and mix until well incorporated.
Step 2: In a nonstick pan, add the corn mixture over medium heat, stirring occasionally, until heated through and thickened. Season with taco seasoning and mix in parmesan cheese. Remove from heat.
Step 3: Pour into bowl and add lime juice. Season with salt and pepper to taste. Serve with tortilla chips.
