Light and Healthy Turkey Meatloaf

Meatloaf is in the regular recipe rotation at my house.  I try to keep things interesting but sometimes it is best to stick with the favorites.  This turkey meatloaf is quick, easy and of course, delicious.  The meal comes together in a flash and only requires 25 minutes to bake.  Depending on what I have available in the pantry, I will substitute ingredients as necessary.  For example, I might use leftover quinoa instead of oatmeal or I'll throw in some chopped kale to boost the meatloaf's nutritional content.  In this regard, it is rare to have the same meatloaf twice.  For those cooks who like things spicy, I like to mix a couple of tablespoons of sriracha hot sauce into the barbecue sauce to give the meatloaf a little extra kick.

Turkey Meatloaf

Ingredients:

1 lb ground turkey breast
2 medium sized eggs
1 1/2 cup oatmeal
1/2 cup plain bread crumbs
1 cup chopped bell peppers
1 small yellow onion, chopped
1 tsp seasoning salt
1/2 tsp ground black pepper
1 tsp minced garlic
1/2 cup your favorite barbecue sauce
