Kid-Friendly Pull Apart Pizza

Pull apart pizza rolls is an ingenious recipe to encourage kids to eat their dinner.  Ricotta cheese is rolled up in pizza dough and topped with pizza sauce and a generous handful of mozzarella cheese. While this recipe is completely vegetarian (cheese only), feel free to add in your favorite pizza toppings including sausage, pepperoni or even anchovies.  You can also amp the vegetables by including an array of sauteed peppers, mushrooms, onions, and olives with the ricotta cheese mixture.

Ingredients:

1 can Pillsbury™ refrigerated classic pizza crust
1 cup ricotta cheese
3 1/2 cups shredded Italian 4-cheese blend (14 oz)
1 egg, slightly beaten
Salt and pepper to taste
1/2 cup pizza sauce

Directions:

Step 1: Heat oven to 400°F. Lightly spray cookie sheet with cooking spray.

Step 2: On cookie sheet, unroll 1 can Pillsbury™ refrigerated classic pizza crust; press out to make 14x9-inch rectangle. Bake 8 minutes.

Step 3: Meanwhile, in small bowl, stir together 1 cup ricotta cheese, 2 cups of the Italian 4-cheese blend, 1 slightly beaten egg, and salt and pepper to taste. Spread mixture evenly over partially baked pizza crust.

Step 4: Starting with one short side, roll up dough being careful to not squeeze to hard or filling milk ooze out.

Step 5: Use serrated knife to cut roll into 1-inch slices; place cut side down on ungreased 12-inch pizza pan.

Step 6: Spread 1/2 cup pizza sauce over tops of slices. Top with remaining 1 1/2 cups Italian 4-cheese blend.

Step 7: Return to oven; bake 10 to 12 minutes longer or until cheese is melted and bubbly. Serve immediately.
