Spaghetti with Avocado Sauce
Test your luck with this new sauce trend – the magic is in the nutrients of the avocados mixed with the fiber in the pasta to help you stay energized (no heavy cream required).
Servings: 8 people
1 box spaghetti
4 tablespoons extra virgin olive oil
1 leek, sliced
1 1/2 cups vegetable broth
1 tablespoon lemon juice
1 large zucchini (just the skin), julienned
1 tablespoon parsley, chopped
Salt and pepper to taste
Step 1. Bring a large pot of water to boil.
Step 2. Meanwhile sauté the leek with 3 tablespoons of olive oil over medium heat. Turn up the heat and add the broth, bring to boil and reduce to half. Remove from heat and allow to cool slightly.
Step 3. Transfer leek mixture to a blender, then add avocado, lemon juice, salt and pepper and process until smooth, set aside.
Step 4. In the same skillet used for the leek mixture add remaining oil and zucchini skins and cook for 1 minute.
Step 5. Meanwhile cook pasta according to directions, drain and toss with avocado mixture, zucchini and garnish with parsley
