Chocolate Cheesecake Easter Eggs

Chocolate cheesecake Easter eggs are a fun way to reinvent the standard chocolate egg.  The hollow egg is filled with a no-bake lemon cheesecake and topped with lemon curd.  You can eat the whole thing bite by bite or enjoy the cheesecake first before diving into the chocolate egg. This is also a great way to use up any remaining chocolate eggs you might have left after your Easter festivities.

Chocolate Cheesecake Easter Eggs

Ingredients:

Lemon Cheesecake: (No bake)
1 can of sweetened condensed milk
8 ounce package Philadelphia Cream Cheese, softened
Juice of 2 lemons

Lemon Curd:
200 ml (or 3/4 cup) fresh lemon juice
1 tablespoon finely grated lemon rind
185 grams (or 3/4 cup) sugar
3 eggs
125 grams unsalted butter, cut into cubes
