Sweet and Simple Sugar Cookie Pizza

Dessert pizza has been around for awhile but now you can make your own version at home using fresh seasonal fruits.  A sugar cookie crust is topped with a sweet cream cheese mixture and fresh fruits.  This simple summer treat takes less than 30 minutes to prepare and kid approved.  For the finishing touch, you can drizzle some melted semi-sweet or white chocolate over top along with some toasted almond slivers.

Sugar Cookie Pizza
Makes 2

Ingredients:

2 packages store-bought sugar cookie dough
1 (8 oz.) package cream cheese
1 1/2 cups heavy whipping cream, chilled
1/2 cup granulated sugar
1/2 teaspoon fine sea salt
1 teaspoon pure vanilla extract
assorted fruits (blueberries, strawberries, raspberries, kiwi, oranges)

Directions:

Step 1: Preheat the oven according to package directions.

Step 2: Lightly spray a pizza pan with cooking spray.  You will need two pans for this recipe. Shape the cookie dough into a disk and press the dough into the pan, leaving an inch border.  

Step 3: Bake according to package directions or until golden brown.  Remove from oven and let cool completely.

Step 4: While the sugar cookie crust is baking, prepare the topping.  Wash and slice all fruit (if necessary).  In a large mixing bowl, whip the heavy whipping cream with sugar, salt and vanilla until stiff peaks are formed.  In a separate bowl, whisk the cream cheese to break up the block.  Add a scoop of whipped cream and stir together.  This helps to help lighten the mixture.  With a rubber spatula, fold in the whipped cream into the cream cheese.  You will have to do this in batches.  

Step 5: Slather the cream mixture on top and decorate with the assorted fruit.
