Getting kids to eat a wholesome meal can sometimes be challenging. The way around this nutritional roadblock is to make food as fun as possible! When our daughter first began to eat solid foods she couldn't eat enough "cheesy omelet squares," little cheese omelets that we cut into fun bite sized pieces. Now, at 5-years-old, we can't get her to eat her once-loved breakfast. So, this morning, I thought I'd approach it in a new way: the presentation. Here's how to make this easy breakfast (it's truly so easy you can do this on school mornings).
Over medium-high heat, melt a pat of butter in a large non-stick skillet
Whip an egg or two, then add to the hot pan.
Lift the skillet and swirl the egg around in a circular motion to form a nice thin and even "disk."
Let the omelet cook for about 2 minutes more until it was set.
Using a spatula, loosen the edges of the omelet and slide the omelet out onto a clean cutting board
Cut omelet into 1-inch strips.
Starting at one end of a strip, begin to roll until a tiny rosette is formed.
Repeat with all the strips and place them together in a bouquet on a plate.
Serve with wholegrain toast and fruit and your kids are ready for the day!
