Homemade Chocolate Covered Cherries

Making Christmas candy is a loved tradition on our farm. These chocolate covered cherries remind me of the first Christmas I spent with my now-husband almost 20 years ago. 

The candy was for his dad, who didn't want to celebrate Christmas in any way, and I was still trying to find that one thing to connect with each of his parents. His mom had been an amazing cook, making everything in the old fashioned French way. It was hard to live up to those kinds of standards. Our taste memory is powerful and no one can cook like your mom. I had overheard him saying how much he loved homemade candy and this recipe was the first one I could come up with in my cookbooks. Luckily these turned out luscious and perfect and his dad ate every one of them with a smile on his face. 

I guess my plan worked, because I am still here all these years later. So, now that his dad is gone, these chocolate covered cherries remind me of how much this simple gift pleased a notoriously hard-to-buy for member of the family. Merry Christmas!

Homemade Chocolate Covered Cherries

Maraschino Cherries-2 small jars
1 stick butter
6 Tbsp corn syrup
1 can sweetened condensed milk
1 tsp. Vanilla
3 lbs powdered sugar
12 oz melting chocolate ( use the best you can find, I recommend Ghirardelli)
