Spring meals take on a lightness that we haven't seen in months. Everything just tastes better with a breathe of warm, fresh air. We love to change up our cooking the moment that the warmer day arrive. The kids' schedules start to become busier and once again it's the time of year when dinner seems to be bumped off of the to-do list.
It's a good idea to have some quick and easy meals to help get control of mealtimes again and of course, chicken is always our go-to meat. A lean protein mixed with plenty of vegetables is easy to pull together and filling. Perfect for the spring season.
