Summer Cooking: Easy BBQ Cilantro Lime Shrimp

Just like every other Maine spring, the weather went from snow last week, to the 70's this week. That means we  get out the grill and start enjoying the best season we have. Grilling doesn't have to just be reserved for burgers. We love eating fresh shrimp, and it's such a quick, easy meal for a summer supper. 

Have you ever marinated your shrimp? If not, you are in for a treat. The mild flavor of the shrimp is perfect for adding a layer of deep seasoning, by marinating for 30 minutes. The best part is how quickly the shrimp cooks on the grill. Three minutes and you are done! It's the perfect meal for a warm summer night. 

Quick and Easy BBQ Cilantro Lime Shrimp

1 lb Shrimp
1/3 bunch of chopped Cilantro
Juice of 3 Limes
Zest of 1 Lime
1 Jalapeno, seeded and minced
3 Garlic Cloves, minced
¼ teaspoon Salt
¼ teaspoon Pepper
¼ teaspoon Cumin
2 tablespoons Olive Oil
Preparation
 
1 Mix all ingredients except shrimp in a bowl
2 Peel and de-vein shrimp
3 Place shrimp in bowl and mix well to cover them all in marinade mixture

 

4 Marinate for 30 min to an hour
