After School Snacking: Veggie Queso Dip

After school snacking will never be the same when you offer this warm cheesy dip, perfect for dipping crunchy veggies and tortillas into. My kids need that afternoon snack after a long day of learning. I like to make sure they get all the veggies I can get into them, and having a cheesy dip makes my job so much easier. This dip is perfect for a party as well. Imagine it with warm, baked tortilla chips. It's bursting with flavors and so smoothly delicious, you will be looking for different foods to pair with it. The cheeses balance out the heat of the jalapenos, making it mild enough for everyone at the table. When I am making this for my youngest chefs, I seed the jalapenos and leave out the red pepper flakes. But do try it with all the ingredients for your heat loving eaters. It's delightful. 

So far, we use this to dip veggies, poured over grilled buns with ham, added to rice and ground beef, the list goes on. It's quickly become my go to ingredient for kid friendly meals. Enjoy! 

Veggie Queso Dip

From Culinary Envy

1 teaspoon olive oil
2 jalapeno peppers, (seeded, if desired), finely chopped
1 yellow baby bell pepper, finely chopped
1 red baby bell pepper, finely chopped
½ teaspoon ground cumin
1 cup half-and-half
¾ lb white American cheese, (I got mine at the deli), shredded
¼ lb fontina cheese, shredded
¼ lb mozzarella cheese, shredded
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon nutmeg
