Korean Beef and Rice Bowls

What could be easier than a hearty recipe that finishes in 15 minutes? From the Taste of Home Simple & Delicious cookbook, this Korean Beef and Rice Bowl is super fast with amazing flavor. I always have brown rice cooked ahead of time to make this lightning fast, and the family knows that if we are running short on time, we can count on this meal being filling and tasty. 

Ground beef is seasoned with a unique Asian styled sauce and served on top of brown rice. Top with delicately flavored green onions (or on our farm, with chopped chives) and it's going to be a family favorite. 

Korean Beef and Rice

1 lb lean ground beef

3 garlic cloves, minced

1/4 cup packed brown sugar

1/4 cup soy sauce

2 tsp sesame oil

1/4 tsp ground ginger

1/4 tsp crushed red pepper flakes

1/4 tsp pepper

2 2/3 cups brown rice

3 green onions, sliced or small handful of chives, chopped fine

1. In large skillet, cook ground beef and garlic until beef is no longer pink

2. Mix brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper. 

3. Stir the sauce into the beef and heat through. Serve over the brown rice, sprinkled with sliced onions or chives.
