10 Crazy Good Cauliflower Recipes That Will Rock Your World!

Ditching carbs is part of my New Year’s Resolution. That means no pasta, no bread, no potatoes and loads of low carb vegetables like cauliflower. This formerly dissed cruciferous vegetable has made a serious comeback, and rightfully so. My favorite preparation is to simply roast cauliflower florets in the oven with a bit of olive oil, salt and pepper (sometimes I give it a good spritz of lemon juice). It comes out wonderfully sweet and caramelized - a far cry from the plain old bitter steamed cauliflower from days past.

It can magically replace mashed potatoes, become a perfect crust for pizzas (check out the Paleo Buffalo Mozzarella & Salami Pizza with a Cauliflower Crust recipe below) and quiches, made into delicious Italian-style poppers, even rolled into an elegant cheese stuffed roulade.  Read on for more tasty cauliflower recipes!

Cauliflower Roulade

Angela at Divalicious Recipes created this beautifully elegant cauliflower roulade that’s filled with a creamy cheese spread. To make the roulade, Angela rices cauliflower then mixes it with egg yolks, Parmesan and Cheddar cheeses, mustard and seasonings, then folds in stiffly whipped egg whites. The mixture is then spread on a parchment lined baking sheet and baked. The filling is spread over the baked roulade, then carefully rolled up into a beautiful Swiss roll.
 
ROULADE:
2 cups (half a head) Cauliflower rice
1/2 cup (56g) Cheddar cheese grated
1/2 cup (50g) Parmesan cheese grated
6 eggs separated
1 teaspoon Dijon mustard
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
FILLING:
1/2 teaspoon garlic powder
3oz (84g) cream cheese softened
1 tablespoons chives finely chopped
1/2 cup (50g) Cheddar cheese grated

These gorgeous roasted cauliflower steaks are the perfect vegetarian side dish. They’re seasoned with tangy sumac (an Arabic spice that’s wonderfully sour. You can get it on Amazon here) and garnished with lovely pomegranate arils. Simple, elegant and oh, so delicious!

Vegan Cauliflower Tacos

Vegan Teriyaki Cauliflower Tacos
