I am trying to perfect a hand pie, but having problems with large air bubbles under the crust despite making holes. If the hole is too large, the filling leaks out. Can anyone give suggestions?

Every recipe I've ever tried, instructed you to lightly press out excess air by starting from the middle and working toward the edges, press out the air while sealing the dough around the filling.
