Well, you will need to decide how hungry your guests are and how many adults vs children you will host. However, for a cookout I usually plan for 1 lb of chicken breasts to feed 3 to 4 people. So, for fifteen, I would buy 4 to 5 lbs of chicken breasts.

In case you're on a budget or worried about quantities, make sure that in addition to the traditional peppers and onions you add budget friendly sliced zucchini, yellow squash, shitake mushrooms and poblano peppers.

It really depends on how much other ingredients you have to go with the fajitas. My restaurant fajitas are about 8 oz of meat per person with about half a large onion and half each of a red and green bell pepper. All that gets wrapped up with lettuce, jack cheese, fresh pico de gallo, guacamole and sour cream.
