Question: Are there any recipes that require applesauce?

I have a bunch of applesauce (3 cups worth) from juicing tons of mini apples. Are there any recipes for lunch/dinner that I can use them in?

It sounds to me like you have mashed up apples not apple sauce. (were they cored?) 3 cups isn't much...add some of that juice (3/4 cup) back into the mash, plus 1/2 cup brown sugar and 1/4 teaspoon of cinnamon and slowly simmer them over medium heat for about 30 minutes until it thickens up a bit. Eat hot (a classic served with pork) or cool and eat plain or serve over ice cream or use in a bread or muffin recipe...to mention a few.

Applesauce Pancakes!

Cup of flour, pinch of salt, teaspoon baking powder, a bit of melted butter, 1 1/2 cups of applesauce, 1/2 cup of milk, one egg, and a bit of vanilla.
Flour, salt and baking powder into a medium mixing bowl. Combine butter, milk and egg. Stir into dry ingredients. Add vanilla and applesauce; beat well. Spoon batter onto a hot, well greased griddle.

I make these once a week...my 15 month old loves them!

I have made applesauce pork chops...in a small roasting pan season your pork chops with salt, pepper and a few mint leaves then pour the applesauce over the top, cover with aluminum foil and bake at 350 for about 30-45 min until pork reaches safe temp of 170, remove foil then bake about 10 minutes more to add a brown to the sauce, I like to serve with white rice. My kids love it.
