Question: where are the live cultures in the yogurt?

August 10, 2010
I'm making Greek yogurt at home and I have a lot of whey left over after straining the yogurt. The question is: where are the live cultures, in the white part (the yogurt) or in the clear liquid (the whey)? Thanks for your help.

The live cultures in yogurt are mixed within the milk product. The live cultures are what turned the milk into yogurt in the first place and remain in it until consumed.

And I know you're not asking this question...but if you have a lot of leftover whey, save it. I use it for creamy soups - a good way to recycle it, given that it's not active from the cultures any longer. Plus, it's better than using just plain water, if you've got that in a creamy soup recipe.
