Yes, there is a translation for the Calabrese word "lippuso" which describes the "puckering" mouth sensation felt on eating a unripe persimmon.
You pretty much defined the word in your own question. I'm sure you're probably looking for a single word equivalent to lippuso but you're most likely not going to find it. Not in English anyway...
