If you see any mold, then it's gone to the dark side. Sometimes worms get into the choke and the leaves, too. Especially if they are organic. When you buy an artichoke, you can check for freshness by checking the stem. It should be very firm, not wiggly and soft. Also, the leaves should be tightly closed as apposed to opened up like a flower.
