Chicken Lettuce Wraps

Ingredients

3 Grilleds Chicken Breasts
12 Green Leaf Lettuce Leaves
Peanut Sauce (I use House of Tsang)
PAM Non Stick Spray

Preparation

Dice and shred your chicken. I prefer to do a little of both. I think it gives good texture to the wraps.

Drain you water chestnuts.

Heat a frying pan on MEDIUM heat. You don't want to cook on too high heat or it will overcook the chicken.

Spray the pan with PAM.

Heat the chicken and water chestnuts.

Quickly follow the next few steps so you don't overcook the chicken.

Peel and julienne the carrots.

Wash your lettuce.

Set each vegetable aside in their own dishes.

Sprinkle a pinch of sesame seeds and add a tablespoon of peanut sauce to your chicken and water chestnuts mixture in the pan.

Let the mixture warm a few more minutes.

Lay out chicken mixture on a serving platter.

Let each diner assemble their own lettuce wrap with chicken mixture topped with carrots and peanut sauce wrapped inside of one lettuce leaf.

Serve with you favorite Asian noodle side.

This recipe takes about 20 minutes with prep time if the chicken is already cooked!
The fantastic thing about this recipe is that it is so versatile. You don't have to use green leaf lettuce. You can use any type of lettuce you prefer. You can even switch up the chicken with beef or shrimp. Also, try using different vegetables like peppers or mushrooms if you have them around.
