Baharat Seasoning

Ingredients

3 tablespoons cumin seed
4 tablespoons black peppercorn
2 tablespoons cinnamon
1 tablespoon grated nutmeg
1 tablespoon star anise
1 tablespoon cardamom seed

Preparation

Finely grind the cumin seed, black peppercorn, star anise, and cardamon.

Mix all the ingredients in a jar with a tight-fitting lid.

Shake to combine.

Store in cool dark places.

This is great when used with ground ginger and green papaya. I mix it all together with yogurt and marinate beef in it. The papaya breaks down the meat and gives it an excellent texture for making kabobs.

Baharat means spices, and it originated from Arabic cuisine. You can buy the pre-mixed packaged version in specialty grocery stores. This seasoning is great on all sort of food from fish to lamb, sauté to stews, wherever your imagination and creativity takes you. It is smoky and savory, but not spicy.

Blending your own allows you to control how exactly you want your season to taste like. You can change the proportion and even add other spices such as cayenne and turmeric.
