My Aunt Lucille’s Award Winning Lemon Cake

Ingredients

2 1/2 cups flour
1 package Jello Instant Lemon Pudding
1 1/2 cups sugar
2/3 cup Butter
1/2 cup lemon juice
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
Lemon Icing
1/4 pound butter
2 tablespoons non dairy cream
Lemon juice
Use enough lemon juice or desired taste and enough milk to make it spreadable wh

Preparation

Sift together flour, baking soda, salt and lemon pudding. Add sugar, butter and buttermilk. Beat Well. Mix in lemon juice. Add eggs and beat well. Preheat oven to 350 F. Bake for 30 minutes or until done.

You can adopt this recipe to any type of cake pan of your choosing.

For my first post on this food blog, I would like honor Aunt Lucille by sharing her lemon cake recipe. My great great Aunt Lucille's award winning Lemon cake which won the grand prize at the San Diego State Fair. This is the cake that she would always make for me when I came to visit her. If you try this recipe, I would love to know how you liked it. Enjoy!

2 ½ cups flour
1pkg Jello Instant Lemon Pudding

½ cup lemon juice
3 eggs
1 tsp baking soda
1 tsp salt
1 tsp vanilla.

Sift together flour, baking soda, salt and lemon pudding. Add sugar, butter and buttermilk. Beat Well. Mix in lemon juice. Add eggs and beat well. Preheat oven to 350 F. Bake for 30 minutes or until done.

Lemon Icing

1 lb powdered sugar.
¼ lb butter
2 TBSP non dairy cream
Lemon juice
Milk.
Use enough lemon juice or desired taste and enough milk to make it spreadable when thoroughly mixed.

You can adopt this recipe to any type of cake pan of your choosing.

Yield:

1.0 cake
