Gluten Free Dairy Free Chocolate Sheet Cake
1/2 cup coconut flour
1/2 cup tapioca flour or cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum
1/2 cup cocoa
1 cup water
1 tablespoon vanilla
1 teaspoon vanilla
1 pound powdered sugar
1/2 cup finely chopped pecans, optional
Preheat oven to 350 degrees.
In a large bowl, combine the coconut flour, tapioca flour, sugar, soda, salt, and xanthan gum.
In a medium saucepan, melt the butter and add the cocoa.
Whisk together to combine and add the water. Bring just to a boil.
Pour the chocolate mixture into the flour mixture.
Pour batter into a large, greased baking sheet.
Bake 15-20 minutes, or until a toothpick inserted into middle comes out clean.
Add the cocoa powder and stir until smooth.
Add the milk, vanilla, and powdered sugar. Stir together.
Pour over hot cake.
