Vegan Gluten Free Chocolate Pudding
1/4 cup Bob's Red Mill Teff Flour
2 cups water
3 tbsp cocoa powder
1 tsp real vanilla extract
2-3 tbsp maple syrup or agave nectar, to taste
Optional: chopped nuts and seeds or unsweetened shredded coconut
Combine teff and water in a saucepan over medium heat, bring to a boil, stirring frequently to keep from sticking to the bottom of the saucepan. It will get a little lumpy, this is fine.
Lower heat and allow to very gently simmer for 15-20 minutes until thick.
Cool to room temperature.
In a blender, combine the teff with remaining ingredients and pulse until well combined. Serve chilled for best results.
