I have recently cut way back on grains and really focused on eating highly nutritious food. I feel so much better for it – much less sluggish and bloated. I have been eating much more protein and really trying to find ways to incorporate more fresh vegetables into my diet.

In what feels like a former lifetime, I frequented a ubiquitous coffee shop for after school study sessions and Saturday outings. My favorite snack was a cookie-bar hybrid, filled with chunks of chocolate and toffee. While those bars disappeared from the pastry case long ago (and my coffee tastes have evolved!), my love for chocolate and toffee has not ceased.

So when I was planning out Super Bowl week, I got the idea to make some sliders. I then decided to take my favorite wings and turn them into slider form. I have never been big on the whole wing thing, but love the “boneless wings” at Wingers Bar and Grill. There these wings are known as “Sticky Fingers”. I have shared a recipe before for a homemade version, but thought a slider would be fun.

Sure, they are much softer and juicier than a typical potato skin. But their natural umami adds a lot of flavor to each small bite. And here’s the real kicker. When you squeeze in the sides, suddenly this little cap transforms. Going from a simple stuffed mushroom to a perfect potato skin look-a-like.

Pineapple Tarts are my family and friends favourite. I've been repeatedly using the same recipe every year and this year I've made them into cute little shapes of pineapple. Place the Pineapple Shaped Tarts into a pretty box and your friends will be very happy to receive this 'ong lai' 旺来which translated literally in Fujian means 'prosperity has come' and also believe that this will bring them good luck after eating them.

I realized that the minute they started baking in the oven. The smell! Oh, the smell! They smelt like a banana cake smothered with buttered popcorn and kissed by milky chocolate. In other words, utterly divine! They tasted even better.

Salad Dressings, Vinaigrettes – sure, you can buy them; Ranch, Italian, what have you. But then the total number of ingredients in your salad bowl will jump from, say, ten to well over forty and include a bunch of long, scary ones you’d never want to pronounce. Making your own salad dressing is easy and it will beat the store-bought kind.

Substitute the freshest white fish fillets available if you can’t find snapper. Lay out 4 squares of foil or baking paper. Divide beans, tomato and basil leaves between each square. Top with fish, skin side down. Season and drizzle over a generous amount of olive oil - about 1 tablespoon per parcel. Seal each parcel and place on a baking tray.

The village laid still and quiet today, the day after a night of revelry for Dia de Los Reyes, or Three Kings Day in Spain. It was in stark contrast to the party of the night before – the village crowd had filled the streets to eagerly await the arrival of the Three Kings, while the children, their presents!
