During these cold winter months my crock-pot is literally a dinner saver. Nothing starts my day off on the right track like having dinner in the crock-pot first thing in the morning! I love this easy beef stew because not only is it hearty and flavorful but it is chock-full of veggies and pretty guilt free!

I made Chinese scallion pancakes few years ago and been making it since then. Traditionally, the scallion pancakes are made without cilantro. But I love it though. It adds a great flavor in there too.
