I experimented a lot with ways to make marshmallow Peeps. The result is melt-in-your-mouth fluffy vanilla bean goodness that is superior in every way to regular Peeps. I brought these to a party for the children to eat, but the grown-ups loved them, too.

I already have a favorite vegetarian "meat" lasagna dish, but when Terry Walters declared this recipe one of her most requested, I knew I had to give it a try. After all, there should be room in our hearts for more than one favorite lasagna dish.

I think this type of patty would be great as a vegetarian burger, too. I'm definitely going to play around with this type of thing in the future.
