I have never made Pad Thai before, but love, LOVE Pad Thai especially with shrimp, and usually order it when my husband and I go out for Thai food. So this was a challenge, yes, to make it gluten AND soy free! I was determined to make this delicious without any indication that soy sauce was missing.

You’d swear there was at least a pound of butter in this beautiful pasta, but nope! Just a little olive oil, lemon juice, fresh basil and a bunch of smooooth avocado whirred up into a savory sauce.
