For 4th of July, I gave the Caprese Salad the patriotic All-American Red, White and Blue touch with the addition of ripe strawberries and sweet blueberries. The berries give it a beautiful sweetness that contrasts the tangy tomato and pairs so well with the balsamic reduction.

Last week I made cauliflower rice sushi. They definitely still taste like sushi – I guess because of the combination of pickled ginger, soy sauce and seaweed. I really recommend you try it, it’s such a healthy alternative to white rice sushi.

I use a jarred alfredo sauce, short cut pasta and a little pre-made pesto sauce. Very very simple, but the creamy sauce mixed with the pesto is really the best-o. “Would you say your pesto is the besto?”
