Beef Flank Steak is cut from the primal flank which is taken from the tip of rib 13. Flank Steak is one of the least tender cuts and most suited to moist heat cooking methods.
Beef Flank Steaks can also be broiled if they are cooked rare and cut across the grain into thin slices that make the connective tissue into smaller, more chewable pieces.
