Chhena Cheese

About

Chhena is fresh, unripened curd cheese made from lucina or water buffalo milk. It's eaten in eastern India (Orissa, Bengal) and Bangladesh. A crumbly and moist form of farmers cheese or paneer, it is used to make Oriya desserts such as rasgulla and chhenapodo, as well as Bengali sweets including sondesh.
