Common Sage (Salvia officinalis) is believed to come from southern Europe and belongs to the family Lamiaceae. It is about 20-70 cm high and especially grown in Germany, USA and Central America.
Sage needs a lot of sun and calcareous soil. The fresh leaves can be harvested at any time and can be used for meat and fish dishes of all kinds (e.g. saltimbocca, roast pork, lamb, rabbit).
The flavor of sage's essential oil is mainly based on cineole, camphor and thujone.
Sage extracts are capable of reducing auto oxidation of unsaturated fatty acids, which means, sage has antioxidant properties.
