Caustic Soda
About
Caustic soda is a strongly base chemical that is used to prepare a number of dishes as it changes the molecular structure of foods. Examples include lutefisk, hominy, German pretzels, and CHinese Lye noodles. Caustic soda is also a key element in curing olives, which are inedible when fresh. Use caution when working with caustic soda, since it can irritate or even burn your skin.
