Labneh is yogurt that has been strained to remove the whey, creating a consistency that is thicker than yogurt but thinner than most soft cheeses. It should be strained at room temperature to develop a tang. It can be used in cooking, as it does not curdle at higher temperatures. It is popular throughout the Middle East, where it is often eaten with olive oil and/or za'atar, a thyme-based spice blend.
