Chinook Salmon

Chinook Salmon is a Pacific Ocean species of anadromous fish. Chinook Salmon is the State fish of Alaska where it is called King Salmon.

The Chinook Salmon can grow to a length of 58 inches and weigh up to 129 pounds. The body is blue-green on the back and top of the head, while the sides are silver and the belly is white. black spots cover the upper half of the body and mouth has a greyish black coloration.

Chinook Salmon are classified into "races" - with Summer, Spring and Fall Chinook being the most popular. They are highly valued as food, though scarce when compared to other types of Pacific salmon.

If you are looking for the best salmon available, always buy fresh (never-frozen) in season. In there summer, there are any many river runs from Washington up through Alaska that offer many choices. The most well known is the Copper River Salmon run. However, you can sometimes get Winter Troll King between late November and late March. Fresh is always more expensive because it usually involves ordering it online and getting it shipped overnight. But it is often worth it. In fact, I have found that it is usually comparable to prices at Whole Foods, even after delivery costs. Look for a retailer that is reliable and provides a level of personal service.
