Taleggio
About
An Italian cows' milk cheese named after Val Taleggio. It is known to be a washed rind cheese with a strong scent, but with a mild flavor with a strange fruity taste. The rind is thing and covered in salt crystals. It can be used in salads and with spices with zucchini and sage. It also melts well in risottos or on polentas.
