European Flat Oyster
The European Flat is a species of oyster from Britanny, France. It ranges from 1½ to 3½ inches (3.8 to 11 cm) across when mature. Native to Europe, though seen off the coast of Maine, this oyster is available wild and farmed. It is round with a flat shell and has a salty and metallic flavor and a crunchy texture. They were fist introduced in the 1950's to the Northwest where they are farmed today.
Varieties include Belon, Marennes, and Helford.
Often baked, batter fried, grilled, sauteed, steamed, roasted, on the half shell, used in soups, stews, stuffings, and appetizers.
