Roquefort Cheese

About

A french, semi-soft blue cheese, tradtionally made from sheeps milk. Roquefort is named for the French village Roquefort-sur-Soulzon, this is in many ways the original blue cheese. In fact, the mold that gives blue cheese its color and flavor is called Penicillium roqueforti .
It contains very high levels of glutamate (an amino acid).
