About
Mustia, fresh ricotta cheese, produced exclusively with sheep’s milk, is still crafted by shepherds in the same old way.
Ingredients: sheep’s whey, salt.
Region: Sardinia, Italy
Physical Description
Soft, delicate, white and compact cheese, cylindrical in shape.
Salted and smoked, using a cane binding which leaves the tell-tale lines on its surface. Could be also have a smooth surface.
Dry cured for 24 hours, than smoked for 5-6 hours.
It may also be spiced with peppers.
Weight between 800 g and 2 kg.
Colors: Could go from amber to hazel.
