Veal Spleen

About

A Spleen is an organ just below the liver, located in the left upper abdomen near the young calves stomach. It is responsible for cleaning the blood, and helps fight infection.

"Veal spleen is sometimes incorporated in sausages. It contains 1/4 more protein than a T-bone steak and about 1/10 of its fat. It is rich in niacin and has twice the iron of liver." - excerpt from Spleen p.51 Unmentionable Cuisine by Calvin W. Schwabe
