Chicha

About

It is a drink made from fermented yellow maize but is also used in the Andes as a term for homemade fermented drinks made from other grains. Traditionally, brewers chew the corn, thus converting the starch into fermentable sugars with their saliva; the boiling process completely sanitizes this step.
