Himsagar Mango

About

Grown in Bengal, the Himsagar Mango is a thin-skinned type of mango that is comparatively sweeter than most varieties. Due to the absence of food quality control in India, the Himsagar mango is a local fruit and difficult to find outside of India.

Yellowish green in color, thin skinned, oval in shape. 5" approximate =/-. Very pulpy.

Selecting and Buying

Seasonality: june
Choosing: By smell or squeezing. Should be able to smell the sweetness through the stem. Skin should yield aside with gentle pressure from your thumb, but not too soft.
Buying: Unable to purchase in most markets. Unbranded fruit unique to India due to poor food quality controls. Specialty regional item. May find at food festivals.
Procuring: Locally harvested for local distribution only. Also found grown wild in limited areas of Bengal.

Preparation and Use

Peel, slice, and eat. Wonderful in Salads or in Salsas.

Cleaning: Wash skin with warm water.

Conserving and Storing

Store at room temperature, ideally 50-55 degrees F. Shelf life of 5 days to a week before ripened. Should be eaten a few days after ripening. Thinner skin ripens fruit faster. Can ripen overnight in a paper bag with an apple.
